Such meals support the digestive system, especially the stomach and spleen, which according to TCM are the basis of health and immunity. Below you will find a recipe that can improve well-being and provide warmth and energy.
Chinese recipe for a warming pumpkin soup with ginger and garlic
Ingredients:
1 small pumpkin (Hokkaido or butternut), peeled and diced
1 large carrot, sliced
1 potato, diced (optional, for thickness)
1 onion, chopped
2-3 cloves of garlic, finely chopped
A piece of ginger (about 2 cm), grated or finely chopped
1-2 tablespoons sesame oil or olive oil
1 liter of vegetable or chicken stock
Salt and pepper to taste
Pinch of cinnamon and turmeric (optional, for an extra warming effect)
Parsley for decoration
Preparation:
In heated oil, fry onion, garlic and ginger for a few minutes until soft and aromatic.
Add the chopped pumpkin, carrot and potato. Fry for a few minutes, stirring frequently.
Add the broth, season with salt, pepper, cinnamon and turmeric. Bring to a boil, then reduce heat and simmer for about 20-30 minutes, until the vegetables are soft.
Once cooked, blend the soup with a blender until smooth.
Serve warm, sprinkled with parsley.
